Ingredients

  • 20 ounces boneless, skinless salmon; drained
  • 1/2 cup chopped bell pepper (optional)
  • 1/2 cup chopped onion (optional)
  • 1/2 cup chopped celery (optional)
  • 1 cup dry breadcrumbs
  • 2 large eggs
  • 1/4 cup mayonaise
  • 2 teaspoons dijon mustard

Preparation

Step 1

in a large bowl, combine all ingredients and mix well. refrigerate for at least 30 minutes. heat skillet on stove and spray with cooking spray. shape into patties and "fry" about 7 minutes on each side, continuing to spray with cooking spray.
