Ingredients
- 6 cups flour
- 3 T +1 t pumpkin pie spice
- 1 T + 1 t baking soda
- 1 T salt
- 6 cups granulated sugar
- 1 29 oz can Pure Pumpkin
- 8 large eggs
- 2 cups vegetable oil
- 1 cup orange juice or water
- 2 cups sweetened dried fresh or frozen cranberries
- 1-2 cups pecans or walnuts
Preparation
Step 1
Preheat oven to 350. Grease and flour four 9 x 5 inch disposable loaf pans.
Combine flour, pumpkin pie spice, baking oda, and salt in extra large bowl with wire whisk, mix until just blended. Add pumpkin mixture to flour mixture stir until just moistened. Fold in cranberries and nuts. Spoon 4 cups of batter in each prepared pan.
Bake 75 to 80 Minutes or until toothpick comes out clean.
