chocolate raspberry cheesecake

Ingredients

  • 1 chocolate pie crust
  • 12 oz cream cheese, softened
  • 1/2 cup sugar
  • 1/2 tsp vanilla
  • 2 eggs
  • 1/2 cup frozen raspberries, thawed
  • sauce(recipe below)

  • sauce;
  • 1 tsp margarine
  • 1 oz unsweetened chocolate
  • 1/4 cup powdered sugar
  • 1 tsp dark corn syrup
  • 2 tsp boiling water
  • 1/2 tsp vanilla

Preparation

Step 1

preheat oven to 325. in medium bowl beat cream cheese until fluffy. gradually add sugar and vanilla. add eggs, one at a time, beating after each addition until well-blended. fold in raspberries. place crust on baking sheet. fill with raspberry mixture. bake for 35 minutes. cool completely and chill.

sauce; combine 1 tsp margarine, 1 oz unsweetened chocolate, 1/4 cup powdered sugar, 1 tsp dark corn syrup and 2 tsp boiling water over low heat until chocolate is melted. remove from heat, stir in 1/2 tsp vanilla. pour over chilled cheesecake and chill for 3 hours.
