Ingredients
- 5 oz. crumbled feta cheese, (1 1/4C)
- 2 large ripe tomatoes, halved & cut in 1/2" pieces or 1 1/2 pints cherry tomatoes, halved
- 1 med. red onion, finely chopped
- 1 large jalapeno, seeded & thinly sliced
- 2 T minced parsley
- 3 T olive oil
- Salt
Preparation
Step 1
In large bowl, gently toss feta with tomatoes, onion, jalapeno & minced parsley. Drizzle olive over salad, season with salt & toss til coated.
Can prepared up to 4 hours before serving.
