Lime Sherbert Dessert

Ingredients

  • Crust:
  • 2 cups crushed town house crackers (2 packs)
  • 1/4 cup sugar
  • 1 stick melted margarine
  • Mix above ingredients together and pat in a 9 x 13 pan.
  • Ice Cream Layer:
  • 1 quart limje sherbert (4 cups)
  • 1/2 gallon vanilla ice cream (8 cups)
  • Mix together and spread on top of crust.
  • Lemon Layer:
  • 1 cup sugar
  • 6 tblsp margarine
  • 4 tblsp lemon juice
  • 2 eggs beaten

Preparation

Step 1

Cook sugar, margarine and lemon juice slightly. Mix a small amount of the cooked mixutre into the beaten eggs, then return all to pan and cook until thickened. Cook and pour over ice cream layer.
