Ingredients
- Crust:
- 2 cups crushed town house crackers (2 packs)
- 1/4 cup sugar
- 1 stick melted margarine
- Mix above ingredients together and pat in a 9 x 13 pan.
- Ice Cream Layer:
- 1 quart limje sherbert (4 cups)
- 1/2 gallon vanilla ice cream (8 cups)
- Mix together and spread on top of crust.
- Lemon Layer:
- 1 cup sugar
- 6 tblsp margarine
- 4 tblsp lemon juice
- 2 eggs beaten
Preparation
Step 1
Cook sugar, margarine and lemon juice slightly. Mix a small amount of the cooked mixutre into the beaten eggs, then return all to pan and cook until thickened. Cook and pour over ice cream layer.
