easy raspberry tartlets

use crackers as the base if run out of cookies

Ingredients

  • 1 ( 8oz) container mascarpone cheese( in the dairy section)
  • 1/3 cup cold heavy cream
  • 1/4 cup sugar
  • 20 vanilla wafers
  • 1 cup raspberries ( 4 1/2 oz), rinsed and dried

Preparation

Step 1

beat mascarpone, cream, and sugar in a large bowl with hand-held mixer on medium-high until stiff peaks form, 1-2 minutes.

dollop some cream mixture onto each cookie. top with a berry.


***you'll have about a cup of the cream leftover, spread it on a cinnamon-raisin bagel
