WARM MUSHROOM SALAD

Ingredients

  • 4 Tbsp. olive oil
  • 3 minced garlic cloves
  • 12 oz. mixed mushrooms (such as oyster, shiitake and cremini)
  • 1/4 cup freshly chopped parsley
  • 1/4 cup chopped walnuts
  • Kosher salt and freshly ground black pepper to taste
  • Freshly grated pecorino or Parmesan cheese for garnish

Preparation

Step 1

In a large skillet, heat the oil over low heat.
• Add the garlic cloves and let warm for 2 minutes.
• Raise the heat to medium-high, then the mushrooms and saute until browned.
• Stir in the freshly chopped parsley. Cook for 1 minute and remove from heat.
• Stir in the walnuts and season to taste with kosher salt and freshly ground black pepper.
• Garnish with the cheese and serve immediately.
