Ingredients
- 6 baked sweet potatoes
- 1/2 tspn grated orange rind
- 1 tspn grated fresh ginger root
- 2 1/2 tbspn maple syrup
- Lightly toasted, chopped pecans for garnish
- 5 tbspn orange juice
- 1/2 tspn grated lemon rind
- Pinch of ground nutmeg
- 1/8 tspn salt (or to taste)
Preparation
Step 1
Preheat oven to 350F
Peel the sweet potatoes and put them in a food processor along with the remaining ingredients.
Process until smooth.
Bake the puree in a casserole dish until heated through, about 15 minutes.
Garnish with the pecans and serve hot.
