Ingredients
- 1/2 Cup Cake Flour
- 1/2 Cup White whole wheat flour
- 6 Tbs. splenda
- 3/4 tsp. baking powder
- 1/2 tsp. baking soda
- 2/3 cup mashed banana
- 3 tbs. oil
- 1/3 cup buttermilk
- 1 large egg
- 1 1/2 tsp. vanilla
Preparation
Step 1
Pre-heat oven to 350 - coat an 8X8 baking plan with spray
Sift together the flours, sweetener, baking powder and baking soda.
Whisk together the mashed banana, oil, buttermilk, egg and vanilla.
Pour the dry ingredients into the wet ingredients and stir until just combined - don't overmix.
Pour the batter into the prepared baking pan and smooth.
Bake for 18-20 minutes until the center of the cake springs back when touched or a toothpick comes out clean. Set cake on wire rack to cook.
