Ingredients
- 2 tbsp red wine vinegar
- 1 tsp dijon mustard
- 3/4 tsp salt
- 1/4 tsp freshly ground black pepper
- 1/3 cup vegetable oil
- 1 lb (9-10 cups) spinach
- 1/2 lb smoked chicken breasts, sliced
- 1 6-oz bag apples, chopped
- 3/4 cup chopped walnuts
- 1/3 lb sliced bacon, cooked and crumbled
- 1 small red onion, finely chopped
Preparation
Step 1
In a small bowl, whisk together vinegar, mustard, salt and pepper. Slowly add oil and continue to whisk until blended. Set aside.
In a large bowl, combine spinach, chicken, apples, walnuts, bacon and red onion. Add dressing just before serving and toss well.
