Sweet Onion and Red Bell Pepper Topping

This is made in the slow cooker and the topping is great on a variety of things.

Ingredients

  • 4 large sweet onions, thinly sliced. (About 8 cups)
  • 4 large sweet red peppers, thinly sliced (about 6 cups)
  • 1/2 cup apple cider vinegar
  • 1/4 cup brown sugar, packed
  • 2 Tbsp brown rice syrup OR honey
  • 2 Tbsp canola oil
  • 2 tsp celery seed
  • 3/4 tsp crushed red pepper flakes
  • 1/2 tsp salt

Preparation

Step 1

In a 5 or 6 quart slow cooker, combine all of the ingredients. Cook, covered, on low for 5-6 hours, or until vegetables are tender. Serve with a slotted spoon.
