Desserts - Pumpkin Squares-Gayle Lovette

Ingredients

  • 1 16 oz. can (2 cups) of pumpkin
  • 1/2 cup sugar
  • 1 teaspoon salt
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup of chopped pecans, toasted (or 1/2 cup)
  • 1/2 gallon of vanilla ice cream, softened
  • 36 ginger snaps

Preparation

Step 1

Combine pumpkin, sugar, salt, ginger, cinnamon, and nutmeg; add chopped pecans. In a chilled bowl, fold pumpkin mixture into ice cream.

Line bottom of 9x13x2 inch pan with half of the ginger snaps. Top with half of the ice cream mixture.

Cover with another layer of ginger snaps and ice cream. Freeze.

Serve with low-fat Cool Whip on top.
