Lemon Coconut Squares

  • 1 1/2 c. flour
  • 1/2 c. confectioner’s sugar
  • 3/4 c. cold butter or margarine
  • 4 eggs
  • 1 1/2 c. sugar
  • 1/2 c. lemon juice
  • 1 tsp. baking powder
  • 3/4 c. flaked coconut

Preparation

Step 1

Combine flour and confectioner’s sugar, cut into the butter until crumbly. Press onto the bottom of a lightly greased 9 x 13 inch pan. Bake at 350º for 15 minutes. Meanwhile in a mixing bowl, beat the eggs, sugar, lemon juice and baking powder until well mixed. Pour over the crust; sprinkle coconut evenly over the top. Bake at 350º for 20 –25 minutes or until golden brown. Cool on rack. Cut into bars.
