Orange Cream Dream Cupcakes

Creamy creamsicle-like filled cupcakes.

Ingredients

  • Orange Buttercream Frosting:
  • 2 1/2 c Flour
  • 1 Tsp Baking soda
  • 1/4 Tsp Salt
  • 1/2 c Buttermilk
  • 1/2 c Sour cream
  • 2-4 drops Orange food coloring
  • 1 c Unsalted butter, softened
  • 2 c sugar
  • 4 large Eggs
  • 1 Tbsp Orange extract
  • 2 c Unsalted nutter, softened
  • 4 c sugar
  • 2 Tsp Vanilla extract
  • 2 Tbsp water
  • 1 Tsp Orange extract
  • 2-4 drops Orange food coloring
  • Vanilla Buttercream Filling:
  • 2 c Cool Whip

Preparation

Step 1

Preheat oven to 350. Prepare baking pans with cupcake liners. In a large bowl, whisk first three ingredients. In a small bowl, combine next three ingredients. Set aside. In a separate large bowl, using a mixer, beat butter until smooth. Slowly add sugar, beat until light and fluffy. Add eggs one at a time. Add extract, mixing well. Add flour mixture alternationg with buttermilk mixture. Mix until well combined. Pour into baking cups to 3/4 full. Bake 30-40 minutes.

For Frosting:

Blend butter until smooth, slowly add sugar until combined. Add vanilla and water, mix at slow speed for 1 min., then at high speed for 5 min. Set aside 1 cup frosting. Add extract and food coloring to remaining frosting, mix well.

For Filling:

In a medium bowl, fold in 2 cups of Cool Whip 1/2 cup at a time into 1 cup of reserved frosting. Whisk until smooth.

To Assemble Cupcakes:

Fill a pastry bag fitted with a large open star tip with vanilla buttercream frosting. Insert the tip half way into the center of the baked cupcake, press until the top of the cupcake begins to rise slightly. After filling cupcakes, frost as desired.
