Ingredients
- 1 medium eggplant
- 2 red bell peppers
- 1 red onion
- Garlic
- Olive oil, s&p
- 1 large tbsp tomato paste
Preparation
Step 1
Roast diced eggplant, red pepper, onion and garlic, drizzled with olive oil and s&p.
Put in food processor with 1 lrge tbsp tomate paste. Pulse until its a route chop.
Serve with diced feta, olives and chipss to dip.
