Ingredients
- 2 Cups self rising flour
- 1 1/2 cups of sugar
- 2 eggs, lightly beaten
- 1 teaspoon vanilla extract
- 1/2 cup of vegetable oil
- 1/2 cup whole milk
- 1 cup of blueberries
Preparation
Step 1
1. Preheat oven to 375, line 18 muffin tin cups with paper liner
2. combine the flour and the sugar, in a smaller bowl combine the eggs, vanilla, oil, and milk. Whisk together and combine. Make a well in the center of the flour mixture. Pour in the liquid. Mix in the flour until moistened, gently fold in blueberries.
3. Spoon the batter into the prepared muffin tins, filling till half-2/3 thirds.
4. Bake for 23-25 minutes, until nicely browned and puffed.
