Lemon Bars

Ingredients

  • Crust:
  • 2 C. flour
  • 1/2 C. powdered sugar
  • 1 C. butter
  • Combine above in bowl (use pastry blender). Pat into a 9X13X2 pan, going up the sides. Bake at 350 deg for 10 minutes.
  • Filling:
  • 2 C. sugar
  • 4 T. flour
  • 6 T. lemon juice (fresh only)
  • 4 eggs
  • Combine above & beat 20 minutes. Pour over hot crust & bake 20 minutes at 350. Cut into squares while hot. Sprinkle with powdered sugar and again when cooled.

Step 1

Secrets:
1) use only fresh squeezed lemon juice
2) beat for at least 10 minutes
3) pour over hot crust and bake immediately
