Candied Yams

Ingredients

  • 1 stick butter
  • 5 large fresh yams/sweet potatoes
  • 1/2 cup maple syrup
  • 1/4 cup dark brown sugar
  • 1 tsp cinnamon
  • 1/4 tsp fresh grated nutmeg
  • 1/2 tsp grated ginger root
  • 1/2 tsp kosher salt
  • 2 1/2 cups mini marshmellows
  • oven at 400 degrees

Preparation

Step 1

Peel yams and cut into 1 inch cubes and arrange in a buttered 9x13 baking dish.

In a saucepan, melt butter and add sugar over medium heat, until dissolved. Add spices.

Bring to a boil and add syrup, reduce heat and simmer for 2 minutes. Pour over potatoes. Cover tightly with foil and bake until potatoes are fork tender. Remove foil and add marshmellows cook until golden brown.
