Ingredients

  • 3 LBS CUCUMBER
  • 2 CUPS BOILED WATER
  • 5 TBS SALT
  • SAUCE: 1 CUP WATER
  • 1/4 c VINEGAR
  • 3 TBS SUGAR
  • 1 TSP CHOPPED GARLIC
  • 2 TSP CHILI PEPPER OR POWDER

Preparation

Step 1

CUT CUCUMBER LENGTHWISE, REMOVE SEEDS AND CUT CROSSWISE INTO BITE SIZE PIECES.
SPRINKLE SALT OVER CUCUMBER, LET SIT 10-15 MINUTES. POUR BOILED WATER OVER CUCUMBERS AND LET STAND FOR 30-45 MINUTES. DRAIN IN COLANDER

ADD SAUCE TO CUCUMBERS PACK INTO JARS AND KEEP IN FRIDGE FOR A DAY BEFORE EATING.
