Banana Cream Pie

  • 3/4 cup sugar
  • 1/3 cup flour
  • 1/4 tsp salt
  • 2 cups whole milk
  • 3 egg yolks beaten
  • 2 Tbsp butter
  • 1-1/4 tsp vanilla
  • Cooled pie crust
  • 4 bananas sliced

Preparation

Step 1

In a sauce pan combine sugar, flour and salt. Add milk gradually while stirring. Cook over medium heat stirring constantly until the mixture bubbles. Keep stirring for another 2 minutes. Remove from heat.

Stir a small amount of mixture into the egg yolks and immediately add egg yolk mixture to the hot mixture. Cook for another 2 minutes. Remove from the stove and add the butter and vanilla. Stir until smooth.

Slice bananas into the pie crust. Top with the pudding mixture.

Bake at 350 for 15 minutes.

Let cool and top with meringue.
