Ingredients
- 1 Pound Crab Meat
- 2 Liters Vegetable Broth
- 2 Medium Butternut Squash
- 1/2 lb carrots
- 6 cloves of garlic
- 2 onions
- 1/2 stick of butter (can you get real butter if it's ok?)
- 1 cup of white wine
- Salt and pepper to taste
- olive oil
Preparation
Step 1
Peel and Cube Butternut Squash. Cook on medium Low with butter, olive oil, salt and diced onions for about five mins. Add enough Vegetable stock so it covers everything and simmer until everything is tender. Add half of the crab meat and wine and cook for another 5 mins.
Puree this soup until it's a nice pureed thickness. Meanwhile, sauté the remainder of crab meat in butter. Bring pureed soup back up to a simmer and add grated garlic and sautéed crab meat, salt and pepper to taste.
