Roasted Okra

My (southern) husband and I only recently discovered we both like okra. I'm so glad we tried it. This recipe sounds easy and delicious. Maybe I'll add some fresh corn. . . . Maybe add some bacon, or is that gilding the lily? In choosing okra, the smaller the pods, the more tender they are.

Ingredients
- 18 fresh okra pods, sliced 1/3-inch thick
- 1 Tablespoon olive oil
- 2 teaspoons kosher salt
- 2 teaspoons freshly ground pepper
Preparation
Step 1
Preheat oven to 425 degrees.
Toss okra with olive oil, salt, and pepper. Line a jellyroll pan (or cookie sheet) with foil, and lay out the okra pieces in a single layer.
Bake for 10 to 15 minutes, until they just begin to brown around the edges. Some like to serve with a lemon wedge.
