Black Bean Soup

Ingredients

  • 3 sticks of fresh celery, diced
  • 1 carrot, diced
  • 1 small onion, diced
  • 2 tbsp olive oil
  • 2-14 oz cans of quality black beans
  • 2 c vegetable stock
  • 1/2 c of whipping cream
  • 1 tsp cumin
  • 1 tsp chipotle spice
  • salt and pepper to taste

Preparation

Step 1

Saute celery, carrot and onion in oil until onions are translucent. Puree beans and vegetables in food processor then add to pan with vegetable stock and simmer for 30 minutes. Lower heat, then add cream, cumin, chipotle seasoning, salt and pepper. For extra spice, add more chipotle and cumin if desired.
