Shrimp Bisque

Ingredients

  • 3 tbl olive oil
  • 1 1/2 pounds medium shrimp
  • 1/4 cup butter
  • 1 lg onion diced
  • 1 carrot chopped
  • 1 celery stalk copped
  • 2 1/2 cups water
  • 1 cup dry white wine
  • 1/4 regular long grain rice
  • 1 bay leaf
  • 1 tsp salt
  • 1/4 tsp cayenne
  • 3 chicken flavor bouillon cubes
  • 1 16oz can tomotoes
  • 2 cups heavy cream

Preparation

Step 1

1. Saute over medium heat in hot olive oil cook shrimp until pink. Remove shrimp.
2. To shrimp pan, add butter, onion, carrot and celery and cook until tender.
3. Stir in water, wine, rice, bay leaf, salt, cayene & bouillon cubes and cook till boiling. Reduce heat and simmer with lid for 15 minutes.
4. Add tomatoes and cooked shrimp
5. Put contents in blender and puree until smoother
5. Return puree to dutch oven and add heavy cream.
Cook until boiling and then serve with Oyster Crackers.
