Penne - Fresh Tomato and Garlic Penne

Ingredients

  • 3 tbsp olive oil
  • 1 cup chopped onions
  • 1 tbsp chopped garlic
  • 4 cup chopped fresh tomatoes (or 2-19oz cans of tomatoes)
  • 1 can (5 1/2 oz) tomato paste
  • 2-3 tsp oregano
  • 1 tsp basil
  • 1 bay leaf
  • 1-2 tbsp sugar
  • pepper to taste
  • 1 pkg penne pasta

Preparation

Step 1

Saute olive oil, chooped onion and garlic for 5-7 minutes.
Add tomatoes, tomato paste, oregano, basil, bay leaf, sugar and pepper.
Simmer for 1 hour
Cook penne. Toss with sauce and serve with parmesan cheese
