hot alaska salmon melts

Ingredients

  • 1 can(15 1/2oz salmon)
  • 1/3 cup mayonnaise
  • 2 tbsp each minced onion and parsley
  • 2 tbsp. drained, chopped pimento
  • 2 tsp. lemon juice
  • dash pepper
  • 3/4 cup shredded cheddar cheese, divided
  • 8 slices French bread(or split english muffins)

Preparation

Step 1

drain salmon, break into large chunks. Add mayonnaise, parsley, onion, pimento, lemon juice and pepper. Toss gently to mix. fold in 1/2 cup cheese. spread about 1/4 cup mixture on each slice of bread. sprinkle remaining cheese over salmon mixture. broil about 6 inches from heat 3-4 minutes or until cheese melts and tops are golden.
