pumpkin roll

Ingredients

  • 3 eggs
  • 1 cup sugar
  • 2/3 cup pumpkin plain
  • 1 tsp lemon juice
  • 3/4 cup flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp ginger
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • filling;
  • 1 cup powdered sugar
  • 8 oz cream cheese
  • 4 tbsp margarine
  • 1/2 tsp vanilla

Preparation

Step 1

beat 3 eggs 5 minutes high speed.

Add sugar, pumpkin, lemon juice

sift all dry ingredients.

Add sift mixture to pumpkin mixture. Pour into 13 x 9 greased and lines with waxed paper cookie sheet.(grease cookie sheet, place waxed paper down), the grease wax paper. Sprinkle with 1 cup chopped nuts. Bake 15 minutes at 375.

Flip dough onto clean towel with powder sugar on it.Roll cake in towel, let cool for 1 hour. Unroll, spread filling, roll cake bake up.

refrigerate 4-6 hours. sprinkle with powdered sugar before serving.
