Blueberry Stuffed French Toast

Ingredients

  • 10 slices bakery style bread, cubed.
  • 2 (8 oz.) packages cream cheese, cubed.
  • 1 1/2 cups blueberries, fresh or frozen
  • 1/2 cup maple syrup
  • 10 eggs, beaten
  • 2 cups milk
  • 1 tsp. vanilla

Preparation

Step 1

Use a 9x13 dish. Layer half the bread, then all the cheese, then all the blueberries, then remaining bread in dish. Mix all other ingredients and pour over the bread.

Cover and refrigerate overnight. Bake covered at 350 for 45 minutes, then uncovered for 30 minutes. Let sit 15 minutes before serving.

Topping:
1 cup sugar mixed with 2 Tbls. cornstarch and 1 cup water. Bring to a boil. Add 1 1/2 cups blueberries and simmer 5 minutes. Serve on side.
