Noodle Kugel dessert (Jewish tradition)

Ingredients

  • 1 cup (250 mL) low-fat cottage cheese
  • 1 cup (250 mL) unsweetened applesauce
  • 2 whole eggs
  • 1 egg white
  • 1/4 cup (60 mL) honey
  • 1/4 tsp (1 mL) vanilla extract
  • 1 1/4 tsp (6 mL) ground cinnamon
  • 1/2 cup (125 mL) chopped walnuts
  • 1/2 cup (125 mL) raisins
  • 6 oz (180 g) (1/2 package) broad egg noodles, cooked according to package instructions, and cooled
  • 1 Tbsp (15 mL) brown sugar

Preparation

Step 1

Preheat oven to 375°F.

In a medium bowl, stir together cottage cheese, applesauce, eggs, egg white, honey, vanilla and 1/4 tsp (1 mL) cinnamon.

Stir in walnuts, raisins and cooked noodles.

Pour into a greased 8-in. round pan. Mix together remaining 1 tsp (5 mL) cinnamon plus brown sugar, and sprinkle evenly overtop.

Bake, covered, for 30 minutes or until set in the middle. Let rest, covered, for 30 minutes. Serve warm.
