Rummo Orzo Pilaf

Ingredients

  • 1 c orzo
  • 1/2 stick butter
  • 1-1/2 c chicken or beef consomme
  • 1 c water
  • 1 small can of mushrooms(4oz)
  • 1 med. onion chopped
  • 1/4 c fresh chopped parsley

Preparation

Step 1

prep: melt butter in frying pan, put orzo(uncooked) in pan and fry lightly brown. add onion, consomme, water and mushrooms, and bring to a boil. cover pan and let simmer on low heat for 30-40 min. (until liquid is absorbed and orzo is tender). salt and pepper to taste; garnish w/ fresh chopped parsley.
