Grilled Beef & Pepper Sandwich

Ingredients

  • 2 tsp. Grated Lemon Rind
  • 1 tsp. Dried Rosemary
  • 1 tsp. Olive Oil
  • 1 tsp. Dijon Mustard
  • Salt & Freshly Ground Black Pepper
  • 3 Garlic Cloves, minced
  • 1 Flank Steak, trimmed
  • 2 Red Bell Peppers
  • 1/3 C. Mayonnaise
  • 3 Tbsp. Finely Grated Parmesan Cheese
  • 1 Tbsp. Fresh Lemon Juice
  • 1 ( 10 oz. ) Round Focaccia Bread, cut in half horizontally

Preparation

Step 1

Prepare grill. Combine first 6 ingredients, plus 2 of the minced garlic cloves in a sm. bowl. Rub spice mixture over one side of the steak; let stand 10 min. Place steak on grill rack coated with cooking spray; grill 8 min. on each side or till desired degree of doneness. Let stand 10 min. Cut diagonally across grain into thin slices. Cut bell peppers into strips & grill till tender. Combine mayonnaise, cheese, juice & remaining garlic clove in a sm. bowl, stirring well. Spread about 1/4 C. mayonnaise mixture onto cut side of each bread half. Arrange beef evenly over bottom half, top with peppers. Cover with top bread half, pressing gently. Cut sandwich into 4 wedges & serve.
