Blueberry Brunch Cake

Ingredients

  • 1/2 cup butter, softened
  • 3/4 sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup sour cream
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 cup blueberries
  • 1 cup pecans (optional)

Preparation

Step 1

Heat oven to 350 degrees. Cream butter and sugar. Add eggs and vanilla. Beat. Toss flour, baking powder, baking soda and salt. Add alternating with sour cream until mixture is smooth. Toss brown sugar, cinnamon and nuts together. Pour 1/2 of the batter into a 9" X 9" pan. Mix berries and 1/2 of the brown sugar and cinnamon mixture. Spread over batter in pan. Pour remaining batter over berries and top with the other 1/2 of the berry mixture. Bake for 35 - 45 minutes.
