B.E.T (Bacon, Egg and Tomato) Salad

Ingredients

  • 4 cups arugula (or spinach)
  • 4 pieces of bacon cooked and cut into pieces
  • 2 roma tomatoes, sliced
  • juice of one large lemon
  • 2-4 eggs, either poached or fried
  • pinch of salt and pepper
  • 1 t. Veggie Bombay

Preparation

Step 1

Toss arugula with lemon juice. Place on two plates. Top with bacon and tomato. Cook eggs and season with salt, pepper, and Veggie Bombay. (Tip: cook the egg so yolk still runs to help coat the salad).

Dressing is not necessary but can be added if desired.
