Ingredients
- 4 large eggs
- 1 3/4 cups sugar
- 1 cup crisco oil
- 2 cups(16oz can) solid pack pumpkin
- 2 cups al purpose flour
- 2 tsp baking powder
- 1 tsp salt
- 2 tsp pumpkin pie spice
- 1 cup golden raisins
Preparation
Step 1
preheat oven to 350
In mixer, beat eggs until frothy;beat in sugar and beat for 2 minutes.
beat in the crisco oil and pumpkin
sift dry ingredients over the raisins and fold dry mixture into the egg mixture. do not over mix.
pour into a greased and floured 13 x 9 pan. Bake in the preheated oven for 35-40 minutes or until done through.
cool on rack and cut into 24 squares
variation: top each square with a toasted walnut half
