pineapple cheese cake

Ingredients

  • pudding filling:
  • 1 pkg vanilla pudding(not instant)
  • 1 can crushed pineapple
  • crust:
  • 1/4 lb butter
  • 1 egg
  • 6 tblsp sugar
  • 2 1/2 cups flour
  • 1 egg
  • 1/4 cup hot milk
  • 1 tsp baking powder
  • cheese filling:
  • 1 # cream cheese
  • 8 tblsp sugar
  • 2 tsp flour
  • 4 eggs(2 at a time)
  • juice of 1 small lemon
  • 3 cups milk
  • 1 tsp vanilla

Preparation

Step 1

1. make crust. sift flour, measure and sift with baking powder. measure butter into large bowl, pour over hot milk. add egg and beat well. add sifted dry ingredients. mix with fork. use dough to line pan 13 x 19.

2.add to pudding mixture in a saucepan the contents of 1# can crushed pineapple including juice and cook until mixture thickens and let cool.

3.make cheese filling by mixing cream cheese with remaining ingredients listed. beat in eggs, 2 at a time. put puddding mixture then cheese mixture. bake 50-60 minutes at 350, if glass 325
