coconut almond carrot ring

Ingredients

  • 1 1/2 cups all purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 cup sugar
  • 1 cup oil
  • 2 eggs
  • 1 cup finely grated carrots
  • 1/2 cup chopped almonds
  • 1/2 cup raisins
  • 2 2/3 cups (7oz) coconut
  • 1 (16oz) can cream cheese frosting

Preparation

Step 1

Mix flour, baking powder, salt and cinnamon. Beat sugar and oil at medium speed until well mixed. Stir in flour mixture. Add eggs, one at a time, beating well after each addition. Stir in carrots, nuts, raisins, and 2/3 cup coconut.

Greased and floured 9" bundt pan, 350- 35 min. Cool 15 minutes.

Remove from pan and finish cooling over rack. frost and cover with coconut.
