TOMATO BAKED EGGS

Ingredients

  • 8 MED-LRG HOT HOUSE TOMATOES
  • 1/4 CUP OLIVE OIL
  • 8 EGGS
  • 1/2 TSP CRUMBLED DRY OREGANO
  • 1/4 TSP SALT AND PEPPER
  • 8 SLICES PRE-COOKED BACON
  • 8 SLICES THICK CUT TOAST
  • 1 TBSP CHOPPED CHIVES OR PARSLEY

Preparation

Step 1

PREHEAT OVEN TO 400
CUT OFF TOP OF TOMATOES; SCOOP OUT AND DISCARD INSIDES. BRUSH OIL IN 9" PAN. SIT TOMATOES IN PAN OPEN SIDE UP. CRACK EGG IN EACH TOMATO, DRIZZLE EACH WITH 1 TSP OIL AND SALT,PEPPER AND OREGANO. BAKE IN CENTER OF OVEN FOR 25-30MINS.
MEANWHILE CUT OFF BREAD CRUSTS AND DISCARD. BRUSH BOTH SIDES OF BREAD W/OIL AND PUT ON BAKING SHEET. BAKE ON RACK BELOW EGGS UNTIL TOASTED ABOUT 10MINS.
SET EACH TOMATO ON BREAD SLICES AND SPRINKLE WITH CHIVES
