pumpkin whoopie pies with maple filling

Ingredients

  • 3 cups flour
  • 2 T cinnamon
  • 1 t. baking powder
  • 1 t. baking soda
  • 1 t. salt
  • 1 t. ginger
  • 1/2 t. nutmeg
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 cup oil
  • 3 cups chilled pumkin
  • 2 eggs
  • 1 t. vanilla
  • Filling
  • 3 cup conf sugar
  • 8 oz cream cheese room temp
  • 1/2 cup unsalted butter room temp
  • 3 T maple syrup
  • 1 t. vanilla

Preparation

Step 1

350*. line baking sheets with parchment paper.in large bowl whisk tog flour,cinnamon,baking powder and soda salt, ginger and nutmeg.
in separate bowl whisk sugar, br sugar, oil together. add pumpkin and whisk to combine. add eggs and vanilla. whisk to combine.
gradually add flour mix to pumpkin mix and whisk til completely combined.
use a small cookie scoop or large spoon to drop rounded heaping tablespoon of dough onto prepared sheets. 1 inch apart.
bake 10-12 minutes, making sure the cookies are just starting to crack on top and a toothpick insered comes out clean. the cookies should be firm to touch. remove from oven and let completely cool on rack.
make filling. beat butter on med speed til smooth about 3 min. add conf sugar a little at a time then maple syrup and vanilla and beat til smooth.
assemble.. turn half of cookies upside down. spoon filling about a tablespoon onto that half. top with other cookie, flat side. press slightly so filling spread to edges.
keep refrigerated till ready to eat
