Black-eyed Pea Soup

Ingredients

  • 5 slices of bacon cut small
  • 1 c chopped onion
  • 2 c chopped tomato
  • 1 clove garlic, minced
  • Pinch of salt
  • 3 c water
  • 2 beef bouillon cubes
  • 2 Tbsp jalapenos, finely chopped
  • 4 cans black eyed peas, drained
  • 3 c grated cheddar or Swiss cheese

Preparation

Step 1

Saute bacon till light brown. Saute onion, tomato, garlic, and jalapeno, salt and pepper in bacon drippings. Add water; dissolve bouillon in mixture. Drain juice from peas and rinse, add to soup. Add cheese and simmer till melted.
