Ingredients
- 5 slices of bacon cut small
- 1 c chopped onion
- 2 c chopped tomato
- 1 clove garlic, minced
- Pinch of salt
- 3 c water
- 2 beef bouillon cubes
- 2 Tbsp jalapenos, finely chopped
- 4 cans black eyed peas, drained
- 3 c grated cheddar or Swiss cheese

Preparation
Step 1
Saute bacon till light brown. Saute onion, tomato, garlic, and jalapeno, salt and pepper in bacon drippings. Add water; dissolve bouillon in mixture. Drain juice from peas and rinse, add to soup. Add cheese and simmer till melted.
