Ingredients
- 6 garlic cloves, peeled
- 1 medium red bell pepper
- 1 medium poblano pepper
- 1 ripe avocado
- 1/4 cup finely chopped green onions
- 2 tablespoons chopped fresh cilantro
- 2 teaspoons fresh lime juice
- 1/4 teaspoon kosher salt
Preparation
Step 1
Wrape garlic cloves in foil, and bake at 450 for 15 minutes or until soft. Cool slightly, revoce skins. Place garlic in a medium bowl, mash with a fork.
Preheat broiler
Cut pepers in half lengthwise, discard seeds and membranes. Place pepper halves, skin side up on a foil-lined baking sheet, flatten with hand. Broil 15 minutes or until blackened, turning frequently. Place in a zip-top plastic bag, and seal. Let stand for 10 minutes. Peel and finely chop peppers.
Peel, seed, and coursely mash avocado. Add chopped peppers, avacado, onions, cilantro, juice and 1/4 teaspoon sal to garlic in bowl. Stir well.
