Tenderloin Medallions

Ingredients

  • 1 lb tenderloin medallions, venison or beef
  • 1/2 tsp ground pepper
  • meat seasoning of choice
  • 3 med onions, thinly sliced
  • 1 garlic clove, minced
  • 3 tbs butter
  • 4 oz sliced mushrooms
  • 3 tbs flour
  • 2 c. water
  • salt to taste

Preparation

Step 1

Lightly sprinkle tenderloins with pepper and seasoning, set aside.

Saute onions in 1 tablespoon butter 3 minutes. Add garlic and cook another 3 minutes. Add mushrooms, saute another 10 minutes. When done, remove vegetables and add the rest of the butter. Saute venison 1-2 minutes per side depending on their thickness. When done, place on platter. Add flour stirring cook 2 minutes. Add water, continuing to stir, until gravy is of desired consistency, return vegetables to pan. adding more water if you wish. Correct seasoning and pour over tenderloins.
