Chicken, Apple-Cranberry

Ingredients

  • 1 . 2 boneless,skinless chicken breasts (approx 6 oz
  • each)
  • 2 . 1/2 cup cranberry or apple juice
  • 3 . 2 tbs brown sugar
  • 4 . 2 firm apples (Granny Smith)
  • 5 . 2 tsp EVOO
  • 6 . 1/4 cranberries, sweetened
  • 7 . 1/4 tsp each salt and pepper

Preparation

Step 1

1. Combine chicken, juice and sugar in resealable bag,
refrigerate at least 30"
2. Core, peal, thinly slice apples
3. Heat EVOO over medium heat. Add contents of bag
save liquid marinate
4. Cook approx 5" per side or until cooked through.
Remove to plate
5. Add butter to skillet, when melted add chicken,
apples and cranberries, saute 2"
6. Add marinate, salt and pepper reduce heat and
evaporate 1/2 volume
7. Return chick, heat and serve
