Bean, Cherry Tomato and Spinach Salad

Ingredients

  • 2 T red wine vinegar
  • 2 T mustard
  • 2 cloves garlic, finely chopped
  • S/P
  • 3 T EVOO
  • 2-15 oz. White beans, drained and rinsed
  • 2 c. Cherry Tomtoes
  • Flat leafed parsley
  • 1 medium red onion, sliced
  • 8 slices cooked and crumbled bacon

Preparation

Step 1

Whisk vinegar, mustard, garlic, s/p. gradually mix in ol. Mix beans, tomatoes, parsley and 2T of dressing. Toss with onion and remaining dressing. Add crumbled bacon on top.
