Sole - Almond Bake

Ingredients

  • 2 Packages (1 Lb each) frozen fillets of sole
  • 1/2 Cup flour
  • 2 Tsp salt
  • 1 Tsp paprika
  • 1/2 Tsp thyme leaf, crumbled
  • 1/4 Tsp pepper
  • 2 Eggs
  • 2 Tbsp dry white wine or milk
  • 3/4 Cup chopped blanched almonds
  • 2 Tbsp melted butter or margarine

Preparation

Step 1

Defrost fish following label directions
Pat dry on paper towel
Combine flour, salt, paprika, thyme, and pepper on wax paper
In a shallow dish stir together eggs and wine
Coat fish with flour then dip into egg mixture, roll in almonds
Place fish on well greased baking pan
Drizzle melted butter over fish
Bake in moderate oven (375) for 15 minutes or until fish flakes easily
(thicker pieces will take longer to bake)
