Baked Apples

Ingredients

  • 4 tart cooking apples, cut in half horizontally
  • 1 T. olive oil
  • 1 T. butter
  • 1/2-3/4 c. apple cider or juice
  • 1-2 t. vanilla
  • juice of 1/2 lemon
  • 1/2 t. cinnamon

Preparation

Step 1


1. In a medium skillet, melt butter with olive oil.
2. Add apple halves, cut side down, and cook until cut side is golden brown.
3. Combine apple juice, lemon juice, vanilla and cinnamon in a small bowl.
4. Remove apples from skillet and place them, cut side up, in a baking pan.
5. Pour apple juice mixture gently over apples and place in 350-degree oven for about 30 minutes, until apples are tender but not too soft. Serve with pork tenderloin.
