Scalloped Carrots

Ingredients

  • 5 cups raw carrots, sliced or diced
  • 1 onion, sliced
  • 1/2 cup butter
  • 1/2 lb. velveeta cheese
  • 12 ritz crackers

Preparation

Step 1

Cook carrots until done; drain. Saute onion in butter. In baking dish, layer carrots and cheese. Pour onion and butter over top. Break up ritz crackers and sprinkle over top. Bake at 350 for 30-40 minutes.
