Peppers, Bell, Stuffed

Ingredients

  • 1 . 2 Peppers, tops cut, seeded
  • 2 . 1/4-1/3 ground beef, browned
  • 3 . 1 cup instant rice, cooked
  • 4 . 8 oz can tomato sauce
  • 5 . 1+ tbs mint leaves, dry
  • 6 . 1/4 cup golden raisins
  • 7 . 1/4 cup pine nuts, toasted

Preparation

Step 1

1. Preheat oven to 350 F.
2. Prepare minute rice = 1 cup rice 3/4 cup water
3. Brown beef, break up clumps.
4. Combine meat, rice, tomato sauce,mint,raisins,
pine nuts. Mix well
5. Blanch peppers in boiling water. Approx. 3"
6. Stuff peppers, place upright in pyrex loaf dish
7. Bake approx.30"
