Ingredients

  • * Salt and pepper to taste
  • 3/4 * 3/4 lb shrimp
  • 8 * 8 oz crab
  • 12 * 12 oz sausage
  • 1/2 * 1/2 yellow onion
  • 1 * 1 roma tomato
  • 1 * 1 avocado
  • 1 * 1 can low sodium, no sugar added corn
  • 1 * 1 bunch scallions
  • 8 * 8 oz 2% sharp cheddar cheese
  • 8 * 8 oz Monterrey Jack cheese

Preparation

Step 1

Preheat oven to 425 degrees. Cook shrimp until just under done then set aside. When cool, dice into bite sized pieces. Cook sausage, dice crab and drain corn. Dice yellow onion, tomato, avocado and scallions. Once all chopping and cooking are complete, layer a large oven safe baking dish with the following: 1/3 of shrimp, onion, crab, sausage and corn. Layer cheddar cheese enough to cover then repeat layers 3 times, alternate cheesing with Monterrey Jack. Place in oven. Stir every 10 minutes for 30 minutes until mixture is bubbly. After all cheese has melted, remove from oven and top with diced tomato, avocado and scallions.
