Ingredients
- 1/2 lb. green beans
- 1/2 lb. yellow beans
- sea salt
- 1/4 cup olive oil
- 1 tbsp. fresh lemon juice
- 1 tsp. fresh thyme
- freshly ground black pepper
- 1/2 cup chopped toasted walnuts
- 1/4 cup crumbled goat cheese
Preparation
Step 1
Clean and trim the beans.
Blanch them in a pot of heavily salted water, then shock them in cold water and set aside.
In a large bowl, combine the olive oil, lemon juice, and thyme with a pinch of sea salt and freshly ground pepper. Toss the beans in the dressing and sprinkle with the toasted walnuts and crumbled goat cheese. Toss again and serve immediately.
